Healthy Rucola And Mozzarella Salad

Hello everybody! It is almost October now and it is time to give your immune system a little boost! So I decided to share a super fast and easy rucola and mozzarella salad recipe with you. Basically this salad is perfect as a starter or a side dish. Of course, if you add chicken fillet or baked salmon, you can have it for dinner or why not even for lunch. Although I haven’t been a big fan of salads, I have discovered two ingredients that really are the game changers for me! These two components are balsamic vinegar and seeds!

The ingredients that I use today are rucola, tomato, mozzarella, seeds and balsamic vinegar, but with this kind of fresh salad, the options are pretty much endless. For example you can use any green salads like green leaf lettuce, red leaf lettuce, spinach. I know that many people do not like rucola because it has quite specific and strong taste so if you are one of them then just replace it with lettuce. You can also use a variety of cheeses, but feta and mozzarella are the most widely used options in salads. The same goes with seeds – you can add or replace them with nuts. In addition there is a possibility to throw in some capers, red chilli or jalapeño.

By all means you make vegan version of this salad, but in this case you should skip mozzarella part and add fried and nicely seasoned tofu cubes. And for extra crunch maybe some crispy vegan bread cubes. As I said options are endless here. Something for everybody!

Quick Rucola And Mozzarella Salad Recipe

INGREDIENTS:

  • 2 big ripe tomatoes
  • 60 g of rucola
  • 150 g mozzarella “pearls”
  • different seeds or nuts
  • drizzle of balsamic vinegar
  • tablespoon of olive oil
  • salt
  • pepper

INSTRUCTIONS:

  1. Firstly wash tomatoes and cut them into fine slices.
  2. Then lay them on the bottom of a big bowl.
  3. Wash rucola and dry with paper or clean kitchen towel.
  4. Now add rucola on top of the tomatoes.
  5. Then put mozzarella pearls on top of the rucola.
  6. Next sprinkle some seeds or nuts on top.
  7. Drizzle with olive oil and taste with salt and pepper.
  8. Finally, add the balsamic vinegar.
  9. Enjoy!
