What Is Plantain?

Hi everyone! The last time I baked banana bread, it turned out so good that I started asking myself… can it get any better than that? Well, actually it can! So this time we’ll bake plantain bread! Plantains, aka cooking bananas, looks like banana and smells like banana but you shouldn’t eat them raw because they are quite hard and really starchy. In fact they are mainly used while they are green as savoury food but if you have over ripe plantains at home you can make sweet bread, chips or add it into a smoothie. They are a good source of magnesium and potassium, even better than bananas. Another advantage plantains have over bananas is that they contain less sugar, thus they are not that sweet! Plantains contain resistant starch, which means that you feel full after eating them and furthermore they don’t boost up your blood sugar.

So why do they have to be over ripe when you want to make plantain bread? Well, because you need to smash them and if they are green it is pretty much impossible to do so, trust me, I tried once. Anyway, I bought my plantains quite green but after 4-5 days on the kitchen counter they are ripe enough.

Plantain Bread Recipe Without Sugar

INGREDIENTS:

  • 4 over ripe plantains
  • 3 eggs
  • 3 tablespoons of olive oil
  • 180 g flour
  • 1 cup of pumpkin seeds
  • 1/2 cup of milk
  • 1 tablespoon of cinnamon
  • 1/2 teaspoon of baking soda (not baking powder)
  • pinch of salt
  • vanilla for taste

PLANTAIN BREAD BAKING INSTRUCTIONS:

  1. Firstly smash over ripe plantains in a big bowl, add eggs, milk, olive oil, baking soda, cinnamon, salt and vanilla and mix all together.
  2. Then add white flour and pumpkin seeds. Put it into a bread baking dish.
  3. Pre heat the oven to 180 degrees, bake your plantain bread for 50 minutes.
  4. Now let it cool a bit.
  5. Finally enjoy your healthy plantain bread!
