
Who wants some pancakes?
Everybody loves pancakes, especially kids. However … everybody knows that they are really not good for you. I tried so many different healthy pancake recipes in the past and almost gave up searching, because it is very hard to get the texture right. Sometimes they turn out too thick (I love thin pancakes). In other times they stick on the pan or they just don’t stick together. Now I have finally found the best recipe for making healthy pancakes. If you follow these instructions, they will turn out just perfect and they don’t have this too heavy banana taste that usually exceeds all other flavours.
How to make these healthy pancakes?
It is super easy to make these healthy banana pancakes. This recipe is for one person (or a bit more :D), but you can always double the amount. If I say healthy then I mean it and if I say it is easy to make, I mean it as well. So here we go:
1 banana
3 eggs
20 g or 1 oz oat flour
1 tbs coconut sugar
cinnamon for taste
pinch of salt
Put all ingredients to blender, blend until smooth. Heat a skillet, use coconut oil to cook the pancakes. Flip the pancake over when the bubbles begin to form, cook other side 2-3 minutes till it’s brown.

Healthy Toppings For Pancakes
Of course you need something to put on your healthy banana pancakes. For toppings you can use pretty much all the berries and fruits that you can find. The most popular are usually strawberries, blueberries, banana slices, coconut flakes etc. For sweetener just use maple syrup, honey, agave syrup or home made jam. In fact my favourite is strawberry jam made out of freshly picked strawberrys.
You can eat these healthy banana pancakes without quilt. There are three eggs in them so they are full of protein. Since they are so filling you could even have them for lunch.
